The following is adapted from a recipe in Simply Vegan by Debra Wasserman. The original called for a pound of tofu, but I only had a 1/2 pound left, so I substituted celery, green onions, and apple for the rest. This substitution simultaneously reduced the fat content and added texture and flavor to the dish.
Spicy Tofu Sauté
1/4 cup water
1 cup frozen or fresh corn kernels
1/2 cup raisins
1/2 pound tofu, crumbled
1 stalk celery, chopped
2 green onions (scallions), chopped
1 small apple, cored and diced
1 teaspoon sesame seeds (optional)
1 tablespoon tamari or soy sauce
1/4 teaspoon cayenne pepper
Sauté all ingredients for 5 minutes over medium-high heat. Lower heat and cover pan. Allow to simmer a few minutes longer. Remove from heat and serve hot.
