VeganMofo 20: Feeding hubby

Ziggy's lunch
For the last several months, I've been getting up around 6 a.m. with boyziggy on most days he has work to make him a hot breakfast and pack his lunch. If you'd asked me five years ago if I'd be doing housewiverly things like this I'd have rolled my eyes, but after 3 1/2 years of underemployment followed by complete unemployment (other than volunteer work), this is an important part of how I'm contributing to our household.

Starting the day with a hot breakfast is good for both of us, though depending on my appetite and running schedule I don't always eat with him. Usually he gets up first and makes tea for both of us (Irish Breakfast for me, Earl Grey for him), then I get up and start preparing the breakfast. Most days it's oatmeal, today it was quinoa.

Ziggy works very long hours during opera season, sometimes 8 a.m. to 11 p.m. or later, though he gets lunch and dinner breaks of course. (Yay for unions!) So frequently I need to pack him enough for lunch, dinner, and snacks. Otherwise he gets tempted to snack on unhealthy junk food at the office, and/or spend extra time and money going out to eat. Today he's getting dinner gratis, so I just packed him enough for lunch and snacks plus a little extra in case the meal they provide is not to his liking.

If I make enough the night before for leftovers he'll have those, otherwise I improvise. Today it's rice and beans with veggies, salsa, and nutritional yeast/garlic powder; an apple (I always try to include fruit; he might still have some leftover at the office too); soy yogurt (we normally only buy this when it's on sale); and cookies. He has a microwave and frig at work, which makes it easy to prepare and pack slightly disassembled meals like this rather than having to put everything in a thermos. We really like OXO containers for storing and transporting food; they're BPA-free and safe for the microwave, dishwasher, and freezer.
